  1. I'm new to Muay Thai, but have done a lot of weight training and this sounds a lot like overtraining or similar issues from long-term under-eating/cutting. How's your diet look and how's your recovery? I'd say you need to give your body a chance to recover, either by giving yourself more food or by giving it an actual chance to rest a bit more. If you're training for fights and need to keep the intensity, you need to up your calories so your body can recover from all the extra work.
